  1. For this fairly easy and quick recipe, cook the pasta first. For this, provide plenty of salted water and cook the pasta in it until al dente - about 10 minutes. The rule here is: 1 liter of water for every 100 g of dry pasta.
  2. While the pasta is cooking, grate or finely chop the cheese. Wash the chives, shake dry and finely chop.
  3. Drain the cooked pasta through a sieve and let it drain.
  4. Heat the olive oil in a saucepan or pan and briefly toss the pasta in it. Then add the cheese, mix briefly and add the chives, salt and pepper. Stir regularly until the cheese has melted.

Tips on the recipe

The recipe is ideal for using leftovers in case pasta is left over.

A wide variety of cheeses such as Tilsiter, Bergbaron or similar can be used.

This recipe can also be topped off with fried onions and a whipped cream topping.

If you like it hearty, you can add a few fried bacon cubes.

You can vary the recipe by using various other herbs such as thyme, oregano or wild garlic.

Wine & drink tip

A glass of white wine such as Grüner- or Frühroten Veltliner from Lower Austria are versatile companions. A light beer goes just as well.
