  1. Peel the potatoes and cut into very small cubes - about 0.5 cm in size. Heat a non-stick pan with olive oil and fry the diced potatoes for five minutes.
  2. Meanwhile, cut the bacon into thin slices and dice the sun-dried tomatoes and avocado. Add the bacon and the chopped tomatoes to the potatoes. Stir well once, turn the heat down and beat the eggs on top.
  3. Put a lid on the pan and cook for a few minutes until the egg white starts to thicken. Then take the pan off the heat, add the avocado cubes and refine with salt, pepper, freshly chopped chives and lemon juice.
